Bacon-Wrapped Scallops with Habanero Mayo Dipping Sauce
For something that is so simple, it is unbelievably tasty. At first I was thinking – what is so special about bacon-wrapped scallops? There’s not much to it, except wrapping cooked bacon around some scallops. Right? But when I took my first bite into this delectable appetizer, I was in heaven. We wanted to share this simple go-to dish that is a great idea for dinner parties, potlucks, cocktail events, or better yet – the upcoming SUPERBOWL! We paired the bacon-wrapped scallops with a spicy habanero-mayo dipping sauce, courtesy of our friend at All Spice Cafe who gave us these hot sauces awhile back. Be creative with your dipping sauce – and if you can’t think of anything, we are sure you will be pleased with eating them by itself!

We used sea scallops that were about 1.5 inches and took pre-cooked bacon and wrapped them around the scallops. Then, we used tookthpicks to secure them, like shown.

Next, sprinkle the scallops with a little sea salt and cook them on a pan for about 3-4 minutes each side until they get nice and brown.

For the dipping sauce, we just used 1 tbsp of Cayenne Habanero Sauce from All Spice Cafe and mixed it with 3 tbsp light mayo. The mayo helps reduce the amount of heat, and also gives it a creamy texture.

The texture of the scallops and the saltiness of the bacon work so well together. It's not difficult to make and doesn't take a lot of time to prep. These are definitely perfect finger food that is sure to be a crowd pleaser! (Okay, I think we need to make more... I'm salivating).

One of my favorite appetizers! I was at a wine tasting not that long ago and this was going around, but no one was eating that many, so my friend and I were hanging out by the kitchen door…okay I just admitting to ‘death by bacon-scallops’ and over indulgence…but my taste buds were happy!

I love bacon wrapped scallops, but I always served them with coctail sauce. This sauce wold make them the bomb at my next party.

I made bacon wrapped scallops for a Christmas party, and my recipe called for broiling. Since they were so small, I thought, “Hey, I’ll just use the broiler in my super fancy toaster oven!” Turns out when the bacon spatters, that thing was a bit too close quarters. My husband walked in the kitchen and asked “Hey, why is the toaster lighting up and flashing?” It was because the bacon grease was shooting up and lighting on fire. Oops. I used the broiler on the oven after that…

A great looking recipe. The common wisdom here in Florida, which I have always totally bought into, is that bay scallops are best. However, I’ll definitely make an exception for this lovely appetizer. Many thanks for it.
