We love to incorporate what we grow in our garden to our kitchen adventures &#8211; and kale just happens to be one of those ingredients that grew so abundantly throughout the winter and spring season. Last year, we also grew kale and shared a recipe, <a href="http://thefoodaddicts.com/toscana-soup-with-homegrown-kale/" target="_blank">Toscana Soup</a>, which many of you enjoyed making yourselves, so thank you for trying it out! Kale is one of those very hearty green vegetables that most people don&#8217;t prefer to eat due to it&#8217;s rough exterior, but once you cook it down or crisp it up, you&#8217;ll be  amazed at how great it tastes and how beneficial it is for you with it&#8217;s high antioxidant properties. If you are one of those people who haven&#8217;t experimented with cooking kale, then here&#8217;s a chance for you to try something simple, easy, and addicting to eat &#8211; baked kale chips.</p>

Almost looks like a forest. That&#39;s Daniel busy cutting some kale for me. We also cut a bunch and gave away to family and friends. There&#39;s more if anyone wants some! </p></div>

You can&#39;t really taste the difference between the two, but it&#39;s nice to have variety. </p></div>

Since we grow everything organic, there are some bugs that like to hang out under the leaves, so I make sure they are gone! The kale leaves need to be dry before it&#39;s seasoned, so I like to put it into my salad spinner to spin all of the excess water out. (One of my favorite kitchen tools!)</p></div>

Then sprinkle with a little salt and pepper. It goes into the oven at 350F for about 10 minutes until you see it shrink and getting crispy. </p></div>

I&#39;ve also tried adding paprika, garlic powder, and apple cider vinegar before baking. As you can see, I have made this a lot at home, and I wanted to experiment with various seasonings. For this post, we wanted to add something special for the kale chips, and that&#39;s herbed butter for dipping. For those who are picky eaters, you know butter may change their minds! The results of your kale chip should be extra crispy and light - almost like it&#39;s melting in your mouth. Beware: they are highly addicting to snack on, but who cares, it&#39;s good for you! </p></div>

We have partnered up with <a href="http://www.tastefullysimple.com/" target="_blank">Tastefully Simple</a> to create a &#8220;game day&#8221; recipe for them using one of their delectable products. We wanted this recipe to be easy to make and more importantly, easy to eat! When we think of game day parties, it usually involves beer, chips and dip, and other junk food. But to really make an impression and feed your guests properly, it&#8217;s best to make some delicious appetizers that will <em>mayyybe </em>distract them from the game on TV. With the variety of unique sauces that Tastefully Simple supplied to us, we were most intrigued with the Bayou Bourbon Glaze. This savory brown sugar bourbon sauce has a hint of onions, garlic, and molasses, which is perfect to liven-up meats and fish. It&#8217;s both sweet and savory, which is similar to that of teriyaki sauce. So why did we choose to make meatballs? Well, it&#8217;s a classic ingredient in many dishes, like spaghetti and soup. It&#8217;s requires simple ingredients yet yields satisfying results. And to top it off with a special sauce, what more can you ask for?</p>

Mix it all up! </p></div>

Shape the meatballs into 1 to 1.5-inch balls. We want them to be small enough so it&#39;s easy to pop in your mouth to eat. </p></div>

This helps brown up the sides and give it that nice texture. It should take about 3-5 minutes to brown up. </p></div>

If you don&#39;t have this, any other sauce or glaze that you like will work. </p></div>

Now, place this tray into the oven at 425F for 8-10 minutes until cooked through. You can brush it again during the baking process. </p></div>

It was a great opportunity for us to use the <a href="http://www.naturespridebread.com/" target="_blank">Nature&#8217;s Pride</a> 100% natural bread that was sent to us by <a href="http://www.foodbuzz.com" target="_blank">Foodbuzz</a> to create a recipe with. We wanted to make something that was easily portable and simple to eat without a lot of fuss, so with some great ingredients, we came up with our version of Roasted Garlic and Olive Tapenade. Tapenade is a popular dish in the south of France that consists of pureed olives, capers, anchovies, and olive oil. It also reflects Mediterranean cuisine because of the main ingredient &#8211; olives. This dish is great as a spread on crackers or bread, and even as a condiment. But to spruce up the flavors of a typical tapenade, we also added roasted garlic infused olive oil, sun-dried tomatoes, and fresh herbs from our garden. It&#8217;s so simple to make because all of the ingredients goes into the food processor and within a minute, you get a beautiful puree that is full of flavor and depth. Here&#8217;s a quick run-down of how we made it and how it was enjoyed at the winery&#8230;</p>

This past weekend, I, along with the other bridesmaids, hosted a Bridal Shower for my girlfriend Cecille who will be walking down the aisle in November. We decorated my house in a Wonderland theme with luscious colors of turquoise, purple, and hot pink for the Saturday afternoon tea party. It was only fitting that I took care of the menu for the lovely occasion, so it was my first time catering without the help of my husband-the-chef. Luckily everything turned out as planned, and the guests were all smiles. You can&#8217;t have a tea party without tea sandwiches, so here is my version of two classics: Egg Salad Tea Sandwiches and Chicken Curry with Cranberry Tea Sandwiches. It was nice to have two distinct flavors for the sandwiches, and even nicer that it was easy to make!</p>

The most time-consuming part about making this is peeling the shell, which I loathe. As you can see, some of my eggs were brutally tortured during the process, while I spared the other ones with a cleaner shell removal.</p></div>

Then add 1/2 cup mayo, 1/4 cup relish, and 3 tbsp Dijon mustard. (Use light mayo to make it healthier.)</p></div>

Taste and adjust seasonings if desired.</p></div>

Using a serrated knife, cut off the edges of the sandwich.  </p></div>

You will yield more if you cut them into triangles, but I think the rectangles look more elegant. </p></div>

This gets dressed with 1/2 cup mayo, 1 diced celery stalk, 1/3 cup chopped dried cranberries, 3 tbsp Dijon mustard, 2 tsp curry powder, and salt &amp; pepper. Adjust the measurements if you want a stronger curry flavor or vice versa. </p></div>

Both mixtures for the tea sandwiches can be prepared a day in advance; just refrigerate then spread on the bread right before the party starts! </p></div>

This helps give the sandwich a nice sweetness while the celery gives it that fresh crisp. </p></div>

Keep everything small, simple, and delicate - just like tea parties are supposed to be. </p></div>

As you may know, we haven&#8217;t been posting as frequently as we used to due to our hectic schedule and other important priorities. <p>For this entry, we wanted to share with you a neat and tasty appetizer that is definitely not of the norm. The salty and sweet combination of this Prosciutto-Wrapped Pear is an exciting flavor and worth the effort to make! It only requires a few ingredients &#8211; pear, prosciutto, parmesan cheese, caramelized onions, and balsamic glaze. It definitely has a fancy touch to it but it&#8217;s ridiculously simple to make. Just make your caramelized onions ahead of time so it&#8217;s ready to go when you want to wrap!</p>

This kind of pear is perfect to use for baking because it holds up to the high temperatures and doesn&#39;t get mushy. </p></div>

To that, add a freshly sliced piece of Parmesan cheese and top it with some caramelized onions. </p></div>

Pop this into the oven at 400-degrees and bake for about 6-8 minutes until the prosciutto crisps up and is lightly browned.   </p></div>

With the abundance of cherry tomatoes growing in our garden, we had to come up with different ways to eat it or we&#8217;d be left with rotten tomatoes! One of my favorite ingredients to add great flavor to dishes is sun-dried tomatoes. They really stand out in pasta salads or as a topping to pizza. To make the most out of our harvest, we made a huge batch of oven-dried tomatoes that took about 4 hours to dry and turned out to be the best dried tomatoes I&#8217;ve ever had! I just figured drying it out in the oven will be more sanitary than leaving it out in the sun for dirt and bugs to get to it. It still results in the same awesome flavor&#8230; and of course, it definitely helps to use fresh and tasty tomatoes with the right kind of  seasonings.</p>

<p>Imagine having a garden full of organic lettuce and greens that you can harvest when you are ready to eat them &#8211; everything from Bibb Lettuce to Arugula. Somehow the days and weeks of watering these plants become so worth it when you take a bite out of your home grown produce. And frankly, lettuce is so low maintenance and grows so quickly that before you know it, you get gigantic lettuce heads that pop out from the dirt that you&#8217;ll end up having to share with family and friends! This is our 2nd year that we&#8217;ve grown our own lettuce and we encourage those with some space in their yard to do the same! You&#8217;ll understand why we appreciate our produce so much!</p>
<p>We harvested some beautiful Sierra lettuce the other day and figured it would be perfect for a meal of lettuce wraps &#8211; low-carb, healthy, and refreshing! Lettuce Wraps are well-known in some restaurants as appetizers because it&#8217;s so light, and typically made with Asian flavors, like soy sauce and Hoison sauce. We basically incorporated a lot of the popular flavors, but made some changes based on our preference. For example, I cannot stand water chestnuts! There&#8217;s just something about the texture and crunch that just ruins the dish for me, so obviously I omitted water chestnuts from the traditional recipe. Instead, I added something different &#8211; glass noodles. Combined with the rest of the ingredients, this helps balance the meal and provides a little bit of carbs. Give our recipe a try or experiment with your own favorite ingredients and you&#8217;ll be thoroughly satisfied with having Lettuce Wraps on the dinner table.</p>
