Spinach Lasagna Rolls with Roasted Red Peppers

Directions

1. Boil lasagna noodles until al dente.

2. Spread ricotta cheese evenly across lasagna noodles.

3. Layer spinach, roasted red peppers, ½ of the mozzarella cheese and 1/3 of the marinara sauce.

4. Start from the end and carefully roll lasagna. Place in a baking dish and cover with remaining marinara and mozzarella cheese.

5. Bake at 400 degrees F until cheese is browned and bubbling.

6. Top with arugula and serve.
