Two Meals in One
It’s always smart to think ahead when you are cooking at home, and that means to make the most of whatever you’re preparing. We were able to stretch our meal into two different dinners (think Robin Miller from the Food Network). Last night, we prepared tomatoes stuffed with ground turkey and fresh vegetables (carrots, celery, garlic, shallots, green onion, and to season it we threw in Lipton Onion Powder, Worcestershire sauce, & pepper). In addition, we made a quick pasta dish with the tomato “insides” that I scooped out. Just make sure the stuffing is all cooked through before serving!

Stuffed tomatoes is always a good option to cook when you have a lot of them on hand.

I think stuffing it was my favorite part.

In the end, it gets sprinkled with fresh grated parmesan cheese.
Since we didn’t use the entire ground turkey mixture, it was saved in the fridge for tonight’s meal - meatloaf. We added bread crumbs as a binder which also maintains its moisture. We baked it in the oven and created a ketchup/worcestershire sauce to spread on top of the meatloaf. It gives it a different taste and texture compared to last night’s stuffed tomatoes.

It's like mini meatloaf slices. Just how I like it.
To be honest, after two days of this stuff, I’m so ready to eat something different! Any suggestions?
